Elote — Mexican Street Corn

- 1/2 cup mayonnaise
- 1/2 cup Mexican crema (or sour cream)
- 1 cup crumbled cotija cheese
- 1 tsp chili powder
- 1 tsp smoked paprika
- 2 limes, juiced + wedges
- Fresh cilantro, chopped

Preheat the grill to medium-high, about 425°F.

Grill corn directly on the grates, turning every 3 minutes, for 12–15 minutes total.

Whisk mayo, crema, and lime juice in a shallow dish.

Brush hot corn with the crema mixture on all sides.
