Cedar Plank Salmon
The plank steams the salmon from below while smoke rolls over the top — impossible to overcook.

Ingredients
- 1 side of salmon (about 2 lb), skin on
- 1 untreated cedar plank, soaked 2 hours
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 2 tbsp brown sugar
- 1 lemon, sliced
- Fresh dill and thyme
- Salt and pepper
Instructions

Soak the cedar plank in water for at least 2 hours (weight it down).

Preheat the grill to medium-high, about 400°F.

Whisk olive oil, mustard, and brown sugar. Brush over the salmon.

Season with salt and pepper. Top with lemon slices and herb sprigs.

Place the plank on the grill for 3 minutes until it starts to smoke.

Add the salmon skin-side down onto the plank, close the lid.

Cook 12–15 minutes until the internal temp reads 125°F for medium.

Serve straight off the plank.
